Can you ever go wrong with banana bread? We don’t think so. Our recipe is vegan, gluten-free and perfect for any crowd! For extra sweetness, the riper the banana, the better.
2 cups gluten-free flour (whatever variety you’d like!)
1 ½ teaspoons baking powder
½ teaspoon baking soda
½ teaspoon cinnamon
¼ teaspoon nutmeg
¼ teaspoon salt
3 ripe bananas, mashed
1/3 cup applesauce or brown sugar
1 tablespoon olive oil
1 teaspoon pure vanilla extract
1 cup blueberries
2-3 tablespoons gluten-free oats (optional)
Preheat oven to 350 degrees. Coat a 9x5 in. loaf pan with olive oil or cooking spray.
Combine flour, baking powder, baking soda and seasonings in a large bowl and set aside.
In a separate large bowl (or stand mixer bowl), beat bananas, applesauce, olive oil and vanilla extract until smooth. Slowly add the dry mixture to the bowl and once combined, stir in blueberries.
Pour batter into loaf pan and top with gluten-free oats. Bake for 35-45 minutes and allow cooling for 15 minutes before slicing. We love topping our slices with homemade jam!
