Fresh Kale Salad

Most of us want to like kale - really, we do. But it can be pretty tough and a little bitter when eaten raw. Our friend and holistic nutritionist, Morella Devost, reveals that the trick to more tender kale is a massage. It seems even vegetables respond well to a little TLC. Here's Morella's recipe for massaged kale salad:


  • 1 bunch kale
  • ¼ - ½ teaspoon sea salt
  • Juice of ½ lemon
  • 1 - 2 tbsp olive oil
  • Pepper
  • Toppings


Wash and tear the kale leaves away from the stem. Pile them up on a cutting board and slice them into strips that can be easily picked up with a fork. Place the kale in a bowl; add the lemon juice, olive oil and sea salt. Massage the kale with your hands until it starts to change to a deeper green and looks wilted. Add all of your favorite salad toppings and sprinkle with pepper.

Favorite toppings of mine: pumpkin seeds, raisins, avocado, cherry tomatoes, walnuts, grated carrot, grated beet, diced apple, etc. Experiment and see which is your favorite!
