Have you ever tried grilling your avocados? We know it sounds a little crazy – but the end result will have you wishing you’d tried it sooner! The coals from the grill infuse a smoky flavor into the avocados, adding the perfect hint of summer to this guacamole recipe.
• 2 ripe avocados
• 1 tablespoon of red onion, diced
• 1 tablespoon of fresh jalapenos, diced
• 1 tablespoon of feta cheese, crumbled
• Juice of 1 lime
• ¼ cup of tomatoes, chopped
• Fresh cilantro, chopped for garnish
• Drizzle of olive oil for grilling
• Salt and pepper, to taste
Heat your grill to a medium-high temperature – brush both the grill grate and avocados with olive oil to prevent sticking. Grill the avocados directly above coals for 3-4 minutes – or until you see visible grill marks. Let cool and top with fresh lime juice. Sprinkle all remaining ingredients (onions, jalapenos, feta, tomatoes, cilantro) onto of the avocados and season with salt and pepper. Eat directly out of the avocado skin itself, or remove all ingredients and turn into a traditional guacamole mixture – either way, it will be delicious!
