It’s hard to find a person out there who doesn’t love tater tots – they’re a favorite snack for kids and adults alike. Layla at Gimme Delicious created a healthier version of tater tots by swapping potatoes for broccoli and we couldn’t get enough of them. Below is our version of the recipe, made with a few slight changes. Perfect as an after-school snack for the kids!
Components:
• 2 cups fresh or frozen broccoli, blanched for 1 minute and chopped
• 1 shallot, minced
• 1 egg
• 1/3 cup white cheddar cheese, grated (We love Cabot's Seriously Sharp)
• 1/3 cup parmesan cheese, grated
• 2/3 cup panko bread crumbs
• 2 tablespoons fresh parsley, chopped
• 1 tablespoon lemon juice
• 1 teaspoon salt
• 1 teaspoon pepper
Creation:
Preheat your oven to 400 degrees.
Blanch fresh or frozen broccoli in boiling water for 1-2 minutes, drain, cool and chop.
Mix broccoli with remaining ingredients in a large bowl until well combined. Line a baking sheet with parchment paper as you form tots from the mixture, place them on the pan.
Bake for 20-25 minutes, flipping half way through the cook time. You’ll want both sides of the tots to be a golden brown color. Serve with your favorite dipping sauce or eat them on their own – they’re that good!
