Summer is the perfect season for incorporating more fruit into your meal routine – and when you’re already outside cooking, it doesn’t get much easier than adding some to the grill. Stone fruits are great for grilling because their thicker skin and flesh can hold up to heat well. For this quick summer dessert, we kept it simple (and light!) by pairing grilled plums with vanilla frozen yogurt and a drizzle of agave syrup. Make it your own by substituting peaches, nectarines or apricots for the plums, and swapping in your favorite frozen yogurt flavor.
- Fresh plums, 1 per person
- Canola or vegetable oil, for grilling
- Pint of frozen yogurt – we went with vanilla bean
- Drizzle of agave syrup
Heat your grill, keeping the temperature at a medium-high level. Brush grill grate and plums with oil. Cook face down until warm throughout and flesh has grill marks, about 3-5 minutes.
Add to a bowl with 1-2 scoops of frozen yogurt. Drizzle agave syrup over plums and ice cream, and garnish with fresh mint.
