Recipes We Love: Vegan Garlic Mashed Potatoes

Who doesn't love mashed potatoes? Here's a favorite recipe that goes with just about everything:

Ingredients:
2 lbs Russet or new red potatoes (or potato of your choice)
4 tbsp soy butter or margarine (if you are avoiding soy, olive oil works just as well)
1/2 cup non-dairy milk
2 cloves garlic, crushed
1/2 tsp sea salt
1 tsp dill or chives

Bring water to a rapid boil in a large pot. Add potatoes and cook until tender. Drain.
While still hot, mash with the other ingredients and top with dill or chives.
If you really want to spice it up add red pepper flakes.

Please cite one credible scientific study that demonstrates the lethal effects of soy, and not the pesticides, herbicides or fertilizers it may have absorbed, in humans.

Soy and Margarine are Killers

There are many studies that have revealed much negative impact that soy and margarine have on the body. I know that the debate is still on for soy but most intelligent people this day in age know that margarine is nothing but junk that has been developed in a lab. The olive oil is by far the best choice.

Dairy Is For Babies

If you have a problem with GMO soy arroyowash, as we all do, simply buy organic.

You are right about mankind trying to fix Mother Nature's "mistakes". One of them is drinking the milk of other species. Cow's milk was intended for baby cows to make them grow fat fast. What were humans thinking? If you're beyond the age of weaning but are still thirsty for milk ask your mother, but leave the animals alone.

I will pass on the soy and margarine and try the olive oil. As for the milk mother nature provides, oats, coconuts, soybeans, almonds and hemp which all make delicious milks. Thank you for the recipe.

Soy and margarine? Guess you don't have an issue with putting genetically modified foods or trans fats in the human gut. And non-dairy milk. Hum. Seems you think Mother Nature made a lot of mistakes that mankind can fix in the lab.
