Recipes We Love: Spiced Roasted Carrots

I don't know about you, but preparing colorful food never fails to cheer me up. The other night I had a hankering for something orange, so I whipped up this roasted carrot dish. It is quick and easy to make, and was a big hit in my house. The recipe calls for cumin, but you can easily substitute chili powder or make the dish with only salt and pepper.

  • Preheat oven to 400
  • Peel one pound of carrots and cut them into strips that look like French fries
  • In a bowl, mix 1 Tablespoon of extra virgin olive oil with 1 Teaspoon of cumin, or a little more to taste
  • Add carrots to the bowl and mix until coated
  • Place carrots on a cookie sheet, and sprinkle with salt and pepper
  • Roast for  10 minutes. Mix with a spatula, and continue cooking until as crisp or as soft as you would like, 5 to 10 minutes more.

I just whipped these up as an afterthought after making banana bread and having the oven already at 350 and wanting to take advantage of that. These were amazing!! Sweet and subtly spicy, never knew cumin would compliment these carrots so beautifully. I had a five pound bag of carrots and I used about four big woody carrots, I think it was more like a pound and a half maybe. I also skipped the bowl step and just drizzled olive oil on them already in the baking sheet (lined with aluminum foil for easy clean-up) and them sprinkled generously with cumin and pepper (no salt!). Yum, yum, YUMMY! Trying not to eat them all before my husband get home. Thanks for the great idea!

TOO hot to use the oven...but fortunately you can prepare these on top of the stove, too. Thanks!

Yum! I'll definitely try this. I recently made this recipe (without the greens because we had other veggies with dinner) ... http://www.foodandwine.com/recipes/grilled-carrot-salad-with-brown-butter-vinaigrette . It was DELICIOUS.
