FOODS WE LOVE: Guacamole

Some people have a sweet tooth. I, on the other hand, have a dip tooth: Everything from hummus to onion dip to that which I consider the avocado form of ice cream: guacamole.
 
Guacamole, to me, is worth every calorie--which boils down to about 300 per cup, comparable to an equal serving of nonpremium ice cream (and lower in calories than the also-delicious hummus, which brings in about 435 per cup). Created by the Aztecs in the 1500s, it was believed to be an aphrodisiac and was a prized delicacy of the emperor Montezuma.

Spring is here, and that means lightening up with some fresh and simple salads. When you’re looking for some variety from leafy greens, cucumber has to be one of the most refreshing veggies around. They are fantastic for anyone trying to increase their intake of fiber--not so much in the count per cup (just 4 percent of the recommended daily allowance) but because their natural water content enables the body to consume fiber more easily.

Bluefin tuna might be a delicious addition to your sushi platter, but the poor, overfished bluefin is not the best choice when it comes to sustainability. Luckily, more and more people are becoming attuned to the importance of sustainable seafood: A new NPR-Truven Health Analytics Health Poll of 3,000 Americans found that 80% of people who eat fish often say that it’s "important" or "very important" that their fish is sustainably caught. In addition, many respondents said they’d be willing to pay more for sustainable seafood.
