I use Seventh Generation Free and Clear Dish Liquid and Laundry Detergent. I've noticed that both smell similar to formaldehyde or glue. The smell is more noticeable in the dish liquid.
I'm wondering which ingredient or ingredients cause the smell, and whether or not there are any health concerns that I should be aware of.

I encounter this kind of situation when I bought some bottled water. I don't know that it was placed direct from sunlight that is why the taste is not pleasant. After that I turn myself to tap water.
I noticed it in the cleaner
I have just started using the seventh generation products. I noticed the smell in the all purpose cleaner/disinfectant. It is mostly noticable when I leave it on a surface (like the product instructions indicate for 10 minutes to disinfect). To me it smells like RAID the ant killer. I think I am going to buy the scented one next time.
Free and Clear Smell
Both Seventh Generation Dish Liquid and Seventh Generation Laundry Liquid contain sodium laureth sulfate and other surfactants derived from coconut. Coconut oil can have a rancid smell. There may be enough residual coconut oil to produce the odor our consumer detects. The odor is not harmful, or an indication of the presence of harmful substances.
I've noticed this in Shampoo & Conditioner too
My wife bought a "free and clear" shampoo and conditioner and I noticed the same thing (a lot less pleasant in the shower!) -- I'll have to check the ingredients...
